This is such a special recipe to me - I always loved this recipe, and now, I have tested this out for my friends and family, and they approve too! I am sharing this just in time for Christmas, so you can WOW your family as they wake up to the HEAVENLY smell of this dish! The key to a great french toast casserole is fresh, french or challah bread, and allowing the bread to soak overnight (this is so crucial!) 1/3 cup of heavy cream
1 (8oz) loaf of French Bread or (8oz) of Challah Bread , cut into one inch squares
1 3/4 cups of milk
2 teaspoons of vanilla extract
1 teaspoon of cinnamon + 1/2 (optional) extra teaspoon of cinnamon to sprinkle on top
1 cup of brown sugar + 1 (optional) extra teaspoon or brown sugar to sprinkle on top
1/2 cup of butter
1)Place the cubed bread pieces into a bowl. In a separate bowl, beat eggs, milk, cream and vanilla extract and 1/2 teaspoon of ground cinnamon together, and pour the mixture over the cubed bread. Move the bread pieces to make sure each one is coated. Cover the bowl with plastic wrap, and put in the refrigerator to soak for 6-8 hours.
2) After the bread has soaked and you are ready to bake your casserole, prepare a greased baking pan. I use a oval baking pan, because it is pretty, but you can use a regular 9X12 pan. Preheat oven to 450 degrees.
3) In a saucepan, melt and combine the butter and 1 cup of the brown sugar over medium heat, stirring frequently, until dissolved (3-4 minutes.) Pour this mixture into the bottom of the greased pan.
4)Place each piece of soaked bread on top of the brownsugar/butter mixture - I like to create a pattern, with every other piece of bread having the crust facing upwards. (Optional Step) Sprinkle 1 teaspoon of brownsugar and one half of a teaspoon of cinnamon on top, and pop it in the oven on the middle rack!
This will bake up in about 35 minutes in my oval dish. The casserole is done when it has puffed up and is golden brown on top. So delicious, and pretty easy to make!
