Recipe - Stone Fruit Galette

Hello, my loves! Today, I am sharing a recipe that I first shared with you all in 2017, with a very special twist!

STONE FRUIT season is coming to an end, and I am highlighting all of my favorite pitted fruits in this Stone Fruit Galette recipe.

A stone fruit is any fruit with a pit in the middle - like peaches, cherries, nectarines and plums. This recipe is so simple - it gives the flavor of a sweet pie, but it is SO much easier to make!

STONE FRUIT GALETTE

Ingredients:

1 pre-made pie crust

Stone Fruit - 1 peach, 1 nectarine, 1 black plum and a handful of red cherries (use any mix of stone fruit you want!)

2 tablespoons of white sugar + extra sugar to sprinkle on the crust

1 heaping tablespoon of cornstarch

Juice of half a lemon

1 beaten egg (used for eggwash)

Ice Cream (optional)

1) Take your pre-made pie crust out of the refrigerator and allow to sit out for at least 15 minutes to come to room temperature. Prepare your fruit - slice all of your fruit thinly except for the cherries. You can slice those in half.

2) Pre-heat over to 425 degrees.

3) Put the sliced fruit in a bowl and add the 2 tablespoons of sugar, 1 tablespoon of cornstarch and the juice of half a lemon. Mix together.

4) On a baking sheet, lined with parchment paper, place your pie crust (unrolled) on top of the parchment paper. Take the sliced fruit and arrange it on the pie crust, starting in the center and moving outward. Leave an inch of pie crust dough uncovered on the edges.

5)Fold the outer edges of the pie dough to create an outer crust. Beat the egg to create an egg wash, and wipe that on the crust with a brush. Then, sprinkle about 1 teaspoon of white sugar evenly around the crust.

6) Place the pan and galette in the pre-heated oven and bake for about 17-20 minutes.

7) Once done baking, remove and let cool for 15 minutes. Garnish with mint and ice cream, and ENJOY!!
