Recipe: Chicken Fried Rice

INGREDIENTS:

3 cups of cooked white rice, cooled (day old rice is ideal!)
2 chicken breasts, chopped in half inch pieces, and seasoned (I used salt, pepper and garlic powder)
1 small white onion, diced small
1 small yellow squash, diced small
1 carrot, grated
1/2 of a red bell pepper, seeds removed and diced small
1 2-inch-long piece of fresh ginger, peeled and grated
4 cloves of garlic, diced small
3 tbsp of soy sauce, or more to your preferred flavor
2 tbsp of butter
Salt and Pepper (for seasoning)

For garnish:
Sriracha sauce
The greens of one scallion
, sliced diagonally

1) Start by browning your protein. I used chicken, which I pre-seasoned with salt, pepper and garlic powder. Over medium-high heat, heat 1 tbs of olive oil in a frying pan. Once the oil is glistening, add the seasoned protein to the pan and cook until browned and cooked through. For chicken, it should take 5-7 minutes.

2) Using a slotted spoon, removed the protein from the pan. In the hot oil still in the pan, add the white onions, carrots, bell peppers and squash. Brown, stirring occasionally, for 5 minutes. Then, add the ginger and garlic, and cook for another 3 minutes.

3) Add the prepared rice and the butter to the vegetable mixture in the pan. Continue to cook on medium to medium-high heat and mix all of the ingredients together and season the dish with a few teaspoons of salt and pepper. (NOTE: don't add too much salt - we will adding soy sauce soon!)
Stir fry the vegetables and rice together for a total of 3 minutes.

4) Cook your egg. Make a cooking surface for the egg in the middle of your pan by pushing the rice/vegetable mixture to the sides of the pan. This should create an empty circle in the middle of the pan's surface. Once this hole has been created in the middle of the rice, add the egg and scramble it in the middle of the pan. Once cooked, fold the egg into the rice and vegetable mixture.

5) Once mixed well, add your cooked chicken and soy sauce and continue to stir fry everything for another minute or two. Remove your pan from the stove, garnish with scallions and Sriracha sauce, and serve!
